Zesty Roast Beef Baguette

I have been on a sandwich kick for a bit. It’s hot outside, the kids are on summer vacation, and we are busy most nights with sports. Sandwiches are the perfect go-to meal when we are busy and want to enjoy the sunshine while it’s here. They let us enjoy our time outside while keeping things simple. This is a sandwich you are going to want to add to your summer sandwich lineup. This zesty roast beef baguette recipe is seriously bursting with flavor.

Here’s What You’ll Need to Make Zesty Roast Beef Baguette

Baguettes

The bread used in this recipe is fresh, homemade baguettes. They have a perfect crusty exterior and a soft, airy inside that makes every bite so satisfying!

Roast beef

Roast beef is one of my favorite sandwich meats. Quality deli roast beef is the centerpiece of the zesty roast beef baguette. It is so juicy, tender and savory. Deli-style roast beef is slow-roasted to medium rare, then thinly sliced- it practically melts in your mouth. High-quality roast beef is free of artificial preservatives or fillers and are often sliced fresh to order at the deli counter.

It’s super easy to make at home, and you can slice and freeze it for up to six months—perfect for those rainy days in March when you’re looking for something to do! If you pack it in one-pound freezer bags, you can prepare these and many other great roast beef recipes all summer long! Provolone

Provolone cheese, with its smooth texture and subtly complex flavor, is a beloved staple in Italian cuisine. It is classified as a semi-hard cheese that adds a balanced saltiness and mild nuttiness. Provolone perfectly complements the robust flavor of the other delicious ingredients in the zesty roast beef baguette.

Arugula

Arugula, also known as rocket, is a leafy green that adds a peppery zest to the zesty roast beef baguette. It is a great addition for both its flavor and nutritional benefits. What makes arugula stand out is its bold, slightly spicy bite. Beyond taste, arugula is packed with nutrients. It’s a rich source of vitamins A, C, and K, as well as calcium and potassium. It also contains compounds believed to support detoxification and heart health. Plus, it’s super easy to grow if you have space for a little garden!

Drunken tomatoes

Drunken tomatoes are a unique addition to zesty roast beef baguettes. These cherry tomatoes are infused with pinot noir. The result is a vibrant medley of sweet, tangy, and subtly boozy flavor that works beautifully in this sandwich, but also many other recipes! The juicy cherry tomatoes are blistered to release their natural sugars and deepen their flavor. The red wine adds a unique richness and depth to these sweet little tomatoes.

Hot banana peppers

Hot banana peppers, with their vibrant yellow color and tangy heat, are one of my favorite peppers to add to sandwiches. Their heat level ranges from 5,000 to 15,000 Scoville Heat Units (SHU), placing them in the same spicy league as jalapeños, though with a tangier and slightly more vegetal profile. The pickled version, which is what I use, enhances their tang and mellows their heat.

Nutritionally, hot banana peppers offer a boost of vitamins C and A, along with capsaicin, the compound responsible for their heat, which has been associated with metabolic and anti-inflammatory benefits.

Mayonnaise

If you’re not making mayonnaise yet, now is the time to start! It really only takes 5 minutes, and the taste is unbeatable!  Unlike the store-bought version, making mayo at home allows you total control over the ingredients, texture, and taste. Besides flavor, homemade mayo is fresher, free of preservatives, and is made in small batches to ensure maximum taste and safety. It’s a reminder that even the simplest condiments can be made better at home.

Preparation, Servings, and Storage

With all ingredients on hand, this sandwich is easy peasy to put together. Within 10 minutes, you can have lunch, dinner, or a wrapped sandwich on the go ready to enjoy. This recipe yields four sandwiches that are as filling as they are delicious. If you are planning to take along, assemble the sandwiches, wrap in parchment paper and keep cold.
