Prime Rib Sandwich with creamy horseradish sauce

Prime rib is one of my favorite cuts of meat. At my first job as a teenager, we made prime rib for Saturday and Sunday dinner. It was always a treat if there was any leftover on Sunday night. I can still remember my first bite of that tender, juicy cut of meat. How could it be this delicious? What had I been missing for my first 14 years of life?

We started making this after my husband came home from a work trip in Fort Wayne Indiana. He was so impressed with the sandwich and said we have to make this! I’m glad he did- it’s delicious!

This is made with our fresh, soft hoagie rolls, freshly prepared creamy horseradish sauce, sweet caramelized onions, seasoned leftover prime rib, and, of course, cheese! The prime rib can be made at home for dinner earlier in the week or bought already cooked. We have a great deli nearby that sells excellent cut prime rib. This is the route we usually take.
