French Carrot Salad
Equipment
- Grater or mandoline slicer
- Medium mixing bowl
Ingredients
- 3-4 Carrots, shredded thinly lengthwise
- 1 tbsp Lemon juice
- 1/2 tsp Dijon mustard
- 1 tbsp Extra virgin olive oil
- 1 tbsp Parsley, chopped
- 1/4 tsp Sea salt
- 1/4 tsp Black pepper
Instructions
- Wash, peel, and shred carrots lengthwise to make long shreds of carrot.
- In a mixing bowl, whisk to combine lemon juice, Dijon mustard, extra virgin olive oil, sea salt, and black pepper.
- Add the carrots and parsley and toss to combine.
- Refrigerate for 30 minutes before serving.
