Ingredients
 

  • 3-4 Carrots, shredded thinly lengthwise
  • 1 tbsp Lemon juice
  • 1/2 tsp Dijon mustard
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Parsley, chopped
  • 1/4 tsp Sea salt
  • 1/4 tsp Black pepper

Instructions
 

  • Wash, peel, and shred carrots lengthwise to make long shreds of carrot.
  • In a mixing bowl, whisk to combine lemon juice, Dijon mustard, extra virgin olive oil, sea salt, and black pepper.
  • Add the carrots and parsley and toss to combine.
  • Refrigerate for 30 minutes before serving.
  • French carrot salad can be stored in the refrigerator for up to 3 days.
