- 3-4 Carrots, shredded thinly lengthwise
- 1 tbsp Lemon juice
- 1/2 tsp Dijon mustard
- 1 tbsp Extra virgin olive oil
- 1 tbsp Parsley, chopped
- 1/4 tsp Sea salt
- 1/4 tsp Black pepper
Wash, peel, and shred carrots lengthwise to make long shreds of carrot.
In a mixing bowl, whisk to combine lemon juice, Dijon mustard, extra virgin olive oil, sea salt, and black pepper.
Add the carrots and parsley and toss to combine.
Refrigerate for 30 minutes before serving.
