Curtido is undeniably one of the most flavorful slaws I have ever tasted. It is a classic Salvadoran accompaniment to freshly made Pupusas. Its vibrant flavors also make it a wonderful addition to fish tacos or even as a zesty topping for a grilled tuna steak. This pickled masterpiece is so delicious that it can easily stand alone as a delightful snack! I could happily indulge in this tangy slaw at least once a week.
Health Benefits of Curtido
Curtido is a bright, colorful relish or slaw that combines the crispness of fresh carrots, the crunch of cabbage, the sharpness of red onion, and a hint of heat from jalapeño. All of these ingredients are seasoned with a tart vinegar, a sprinkle of sea salt, and aromatic oregano, creating an abundance of flavors. What’s more, this homemade slaw is prepared entirely from natural ingredients, free from preservatives and artificial additives. In addition, curtido is naturally low in fat and has only 80 calories per serving. It is also vegetarian and keto friendly. One serving has only 2 total net carbs.
Moreover, the vitamins and nutrients found in curtido can enhance eye health, fortify bones, reduce inflammation, and even boost metabolism. The vinegar not only works as a preservative but also enhances and protects the nutrients in the vegetables, making curtido a solid choice for wellness. The fermentation process creates probiotics that support a healthy digestive system and strengthen the immune response, adding to the numerous health benefits of this delightful slaw.
Preparation, Servings and Storage
This recipe for curtido is so simple to prepare and takes only 5 minutes. After allowing the vinegar and salt to pickle the slaw for a couple of hours, it is perfect to serve alongside freshly prepared pupusas or as a side dish. One freshly prepared bowl of curtido can serve up to 8 people. Leftovers can be stored in a glass jar with a tight lid in the refrigerator for up to 4 weeks. So, if you love this Salvadoran slaw as much as I do, double the recipe to have it on hand!
