Ingredients
- 2 pounds Carrots
- 1/2 cup Butter
- 1/2 cup Honey
- 1 tsp Vanilla extract
- 1 tsp Sea salt
- 3 tbsp Flour
- 1 tbsp Baking powder
- 3 Eggs
- 1 tbsp Powdered sugar
Instructions
- Wash, peel and cut the carrots into 3 inch pieces.
- Boil the carrots in a large stockpot for 20 minutes or until a fork can easily pierce through.
- Drain the carrots and place them into a blender with the butter.
- Preheat the oven to 350℉.
- Blend on high speed until the carrots are pureed.
- Add the honey, vanilla, salt, flour, baking powder, and eggs to the blender.
- Puree again to mix all the ingredients.
- Pour the carrot mixture into a lightly greased 2 quart baking dish.
- Bake for 45 minutes.
