  • Wash, peel and cut the carrots into 3 inch pieces.
  • Boil the carrots in a large stockpot for 20 minutes or until a fork can easily pierce through.
  • Drain the carrots and place them into a blender with the butter.
  • Preheat the oven to 350℉.
  • Blend on high speed until the carrots are pureed.
  • Add the honey, vanilla, salt, flour, baking powder, and eggs to the blender.
  • Puree again to mix all the ingredients.
  • Pour the carrot mixture into a lightly greased 2 quart baking dish.
  • Bake for 45 minutes.
  • Allow to cool for 15 minutes before dusting with powdered sugar. Serve immediately.
