Wash, peel and cut the carrots into 3 inch pieces.
Boil the carrots in a large stockpot for 20 minutes or until a fork can easily pierce through.
Drain the carrots and place them into a blender with the butter.
Preheat the oven to 350℉.
Blend on high speed until the carrots are pureed.
Add the honey, vanilla, salt, flour, baking powder, and eggs to the blender.
Puree again to mix all the ingredients.
Pour the carrot mixture into a lightly greased 2 quart baking dish.
Bake for 45 minutes.
Allow to cool for 15 minutes before dusting with powdered sugar. Serve immediately.
