One Pot Italian Creamy Chicken and Gnocchi

Ingredients
- 2 tbsp Olive oil
- 1 pound Chicken tenderloins
- Salt & pepper to season the chicken
- 2 tbsp Olive oil
- 1/2 cup Yellow onion, diced
- 1/2 pound Mushrooms, chopped
- 2 cloves Garlic, minced
- 1/2 tsp Italian seasoning
- 1 cup Chicken broth
- 1 17.6 oz package Gnocchi
- 1 cup Heavy cream
- 1/4 cup Parmesan cheese, freshly grated
- 1 cup Spinach
Instructions
- Heat 2 tbsp of olive oil in a large dutch oven.
- Season the chicken tenderloins with salt and pepper.
- Cook the chicken in the hot dutch oven for about 4-5 minutes per side.
- Remove the cooked chicken tenderloins to a plate and tent with foil.
- Add 2 tbsp of olive oil to the dutch oven.
- Sauté the onion, mushrooms, and garlic until softened and all the liquid is absorbed.
- Add the italian seasoning and chicken broth, scraping the bottom of the pot to remove any brown bits.
- Add the gnocchi to the pot, stir, and cook for 5 minutes.
- Stir in the cream and parmesan cheese.
- Return the chicken to the pot and add the spinach leaves.
- Stir to coat all of the ingredients in the creamy sauce.
- Place the dutch oven into the oven and broil for 4-5 minutes to achieve a light browning on top of the chicken and gnocchi.
- Remove from the oven and allow to cool for 10 minutes before serving.
