One Pot Italian Creamy Chicken and Gnocchi

- 2 tbsp Olive oil
- 1 pound Chicken tenderloins
- Salt & pepper to season the chicken
- 2 tbsp Olive oil
- 1/2 cup Yellow onion, diced
- 1/2 pound Mushrooms, chopped
- 2 cloves Garlic, minced
- 1/2 tsp Italian seasoning
- 1 cup Chicken broth
- 1 17.6 oz package Gnocchi
- 1 cup Heavy cream
- 1/4 cup Parmesan cheese, freshly grated
- 1 cup Spinach
Heat 2 tbsp of olive oil in a large dutch oven.
Season the chicken tenderloins with salt and pepper.
Cook the chicken in the hot dutch oven for about 4-5 minutes per side.
Remove the cooked chicken tenderloins to a plate and tent with foil.
Add 2 tbsp of olive oil to the dutch oven.
Sauté the onion, mushrooms, and garlic until softened and all the liquid is absorbed.
Add the italian seasoning and chicken broth, scraping the bottom of the pot to remove any brown bits.
Add the gnocchi to the pot, stir, and cook for 5 minutes.
Stir in the cream and parmesan cheese.
Return the chicken to the pot and add the spinach leaves.
Stir to coat all of the ingredients in the creamy sauce.
Place the dutch oven into the oven and broil for 4-5 minutes to achieve a light browning on top of the chicken and gnocchi.
Remove from the oven and allow to cool for 10 minutes before serving.
