One Pot Italian Creamy Chicken and Gnocchi

Ingredients
 

  • 2 tbsp Olive oil
  • 1 pound Chicken tenderloins
  • Salt & pepper to season the chicken
  • 2 tbsp Olive oil
  • 1/2 cup Yellow onion, diced
  • 1/2 pound Mushrooms, chopped
  • 2 cloves Garlic, minced
  • 1/2 tsp Italian seasoning
  • 1 cup Chicken broth
  • 1 17.6 oz package Gnocchi
  • 1 cup Heavy cream
  • 1/4 cup Parmesan cheese, freshly grated
  • 1 cup Spinach

Instructions
 

  • Heat 2 tbsp of olive oil in a large dutch oven.
  • Season the chicken tenderloins with salt and pepper.
  • Cook the chicken in the hot dutch oven for about 4-5 minutes per side.
  • Remove the cooked chicken tenderloins to a plate and tent with foil.
  • Add 2 tbsp of olive oil to the dutch oven.
  • Sauté the onion, mushrooms, and garlic until softened and all the liquid is absorbed.
  • Add the italian seasoning and chicken broth, scraping the bottom of the pot to remove any brown bits.
  • Add the gnocchi to the pot, stir, and cook for 5 minutes.
  • Stir in the cream and parmesan cheese.
  • Return the chicken to the pot and add the spinach leaves.
  • Stir to coat all of the ingredients in the creamy sauce.
  • Place the dutch oven into the oven and broil for 4-5 minutes to achieve a light browning on top of the chicken and gnocchi.
  • Remove from the oven and allow to cool for 10 minutes before serving.
