Chicken salad is one of my favorite quick sandwiches to prepare because it is quick and delicious. It is perfect for lunch, meals on the go, or a quick dinner on busy nights. This spicy chicken salad sandwich is loaded with fresh herbs and spices, as well as, sharp cheddar cheese, on our toasted sourdough loaf bread. It features tender chicken blended in creamy homemade mayonnaise.
I had discovered this recipe years ago and it is by far the most used chicken salad recipe in my house. This highly satisfying sandwich will keep your belly full from all the protein from the chicken and fiber from the bread.
Chicken salad sandwiches are a classic American style sandwich. There are countless varieties of add ins and fillers. The base of chicken salad is generally chicken and mayonnaise, but there are many creative additions. Basic chicken salad sandwich contains chopped celery, onions, salt, pepper, chicken and mayonnaise. Nevertheless, this recipe is different from the many of the others because of the addition of fresh lime juice, cayenne pepper, and chopped cilantro.
What is Gruyère cheese?
Gruyère cheese is one of my favorite cheeses. Its origin is Gruyère Switzerland. It is a semisoft cheese that is, in fact, similar to cheddar, Gouda (Dutch), Danbo (Danish), or Comté (French) cheese. Gruyère cheese has a mildly earthy, creamy flavor that enhances the other flavors in the sandwich.

Spicy Chicken Salad Sandwiches
Equipment

- Toaster
Ingredients
- 1 pint jar Chicken (approximately 1 pound), shredded
- 1/2 cup Mayonnaise
- 1 tbsp Dijon mustard
- 1/2 tsp Cayenne pepper
- 1/4 cup Diced white onion
- 1/4 cup Chopped cilantro
- 1/2 Lime, juiced
- Salt and pepper
- Arugula or romaine lettuce
- Gruyere cheese, sliced
- Sourdough bread
Instructions
- In a medium bowl, combine drained jar of chicken, mayonnaise, dijon mustard, cayenne pepper, diced white onion, lime juice and chopped cilantro. Add salt and pepper to taste.
- In a toaster, toast the sourdough bread.
- Place one slice of gruyere cheese, chicken salad mixture, and romaine on the toasted bread.
- Serve immediately.
- The chicken salad mixture can be stored in an airtight contain in the refrigerator for up to 3 days.
