Perfect Chocolate Chip Cookies

 

 

Warm, fresh chocolate chip cookies are among the greatest treats. While few cookies can achieve perfection, nothing beats these chewy, soft chocolate chip cookies.

 

There are five important tips for soft, chewy chocolate chip cookies.

Chocolate chip cookies can occasionally be temperamental depending on several factors. Here are some important tips to a successful batch of cookies.

  1. Butter temperature: The butter must be softened. It is best to soften butter by leaving it out of the refrigerator at room temperature for about 30 minutes. Avoid microwaving butter, however, as the high heat can unevenly soften butter.
  2. Creaming butter and sugar: The butter and sugars should be well blended after mixing. Perfectly creamed butter and sugar mixture takes about three minutes. The volume of the products should be slightly increased as well as the texture should not be grainy.   3. Mixing Dry ingredients: When mixing in the dry ingredients, combine them just until the flour is incorporated. Over mixing the dough will over activate the gluten in the flour and can make the cookies dense and flat.
  4. Baking soda slurry: Creating a slurry of baking soda and water helps to evenly distribute the baking soda throughout the dough. When the baking soda is evenly distributed, it improves the texture and ensures even spreading of the cookies.
  5. Chilling the dough: Chilling the dough allows the ingredients to meld, reducing the chance of a flat, crispy cookie. Cookie dough that chills prior to baking creates a thicker chewier finished product.

 

Preparation, Yield, and Storage

These chocolate chip cookies take about 10 minutes to prepare, followed by a one-hour refrigeration.  Baking takes about 10 minutes per batch. Each sheet pan can bake one dozen cookies. Two sheet pans can bake in a standard oven at one time.

The total yield of cookies is four dozen. These cookies can be stored in an airtight container at room temperature for up to 5 days. They can also be frozen in a freezer bag for up to 3 months.

Ingredients
  

  • 1 cup Butter, softened
  • 1 cup Sugar
  • 1 cup Brown sugar
  • 2 Large eggs, room temperature
  • 2 tsp Vanilla extract
  • 3 cups Flour
  • 1 tsp Sea salt
  • 1 tsp Baking soda dissovled in 1 tsp water
  • 2 cups Chocolate chips

Instructions
 

  • In a stand mixer, combine butter with sugar and brown sugar. Beat with the paddle attachment until the 3 ingredients are combined.
  • Add the eggs and vanilla extract and beat again until all ingredients are combined.
  • Turn the mixer off. Add flour, salt, and baking soda slurry.
  • Restart the mixer and mix until dry ingredients are just combined.
  • Remove the bowl from stand mixer. Using a rubber spatula, scrap bowl to make sure all the dry ingredients are combined.
  • Add chocolate chips to cookie dough and thoroughly fold into the dough.
  • Cover the bowl with plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 350 degrees.
  • Scoop the dough into about a tablespoon shaped ball and place on baking sheet.
  • Bake for 10 minutes. Remove pan from oven and rest on the pan for 5 minutes before transferring the cookies to a cooling rack.
