Coconut Lime Zucchini Bread
- 1/2 cup Coconut oil
- 1 Lime, zested and juiced
- 1 cup Sugar
- 1 tsp Vanilla extract
- 2 cups Zucchini, shredded
- 2 Eggs
- 2 cups Flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Sea salt
- 1 cup Unsweetened coconut flakes
Coconut Lime Frosting
- 1 cup Powdered sugar
- 1 tbsp Coconut cream
- 1 Lime, juiced
Instructions
- Preheat the oven to 350℉.
- In a large mixing bowl, microwave the coconut oil for 1 minute.
- Mix in the lime zest and juice, sugar, vanilla, zucchini, and eggs. Stir to combine.
- Fold in the flour, baking powder, baking soda, and sea salt being careful to not overmix the batter.
