Coconut Lime Zucchini Bread

  • 1/2 cup Coconut oil
  • 1 Lime, zested and juiced
  • 1 cup Sugar
  • 1 tsp Vanilla extract
  • 2 cups Zucchini, shredded
  • 2 Eggs
  • 2 cups Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Sea salt
  • 1 cup Unsweetened coconut flakes

Instructions
 

  • Preheat the oven to 350℉.
  • In a large mixing bowl, microwave the coconut oil for 1 minute.
  • Mix in the lime zest and juice, sugar, vanilla, zucchini, and eggs. Stir to combine.
  • Fold in the flour, baking powder, baking soda, and sea salt being careful to not overmix the batter.
