Instructions

  • Set up the breading station. In the first bowl, flour, the second bowl, 3 eggs whisked, the third bowl, panko bread crumbs.
  • One at a time, scoop out about 2 tbsp of potato mixture and form into a ball.
  • Drop the ball into the flour, then the egg, then the panko.
  • Fry the croquettes for 3-4 minutes, turning to brown all sides.
  • Remove from the stockpot with a slotted spoon to a paper towel lined plate.
  • Continue batch cooking until all of the croquettes are done.
