2 pounds Potatoes, cooked, mashed, and cooled (about 4 cups) 2 cups White cheddar cheese 1/2 cup Green onions, diced 1/2 tsp Garlic powder 1 tsp Sea salt 1 tsp Black pepper 1/2 cup Flour 3 Eggs 2 cups Panko bread crumbs Avocado oil (for frying)
In a large mixing bowl, combine the mashed potatoes, garlic powder, sea salt, and black pepper.
Gently fold in the cheese and green onions.
Fill a stockpot or dutch oven with about 2 inches of avocado oil. Turn on the heat and heat up to 350℉.
Set up the breading station. In the first bowl, flour, the second bowl, 3 eggs whisked, the third bowl, panko bread crumbs.
One at a time, scoop out about 2 tbsp of potato mixture and form into a ball.
Drop the ball into the flour, then the egg, then the panko.
Fry the croquettes for 3-4 minutes, turning to brown all sides.
Remove from the stockpot with a slotted spoon to a paper towel lined plate.
Continue batch cooking until all of the croquettes are done.
