  • Preheat the oven to 375℉.

  • Remove the milk from the heat and very slowly add about half of the milk mixture to the egg mixture, whisking continuously.
  • Pour the tempered egg mixture into the milk mixture and return to medium heat.
  • Bring to a boil, stirring constantly until thickened.
  • Remove from the heat and add the butter, whisking to combine.
  • Cover the pastry cream and refrigerate for 30 minutes.
  • To make the whipped cream, beat the powdered sugar, heavy cream, and vanilla extract in a mixing bowl for 5-8 minutes.
  • Pour the pastry cream on top of the sugar cookie crust and smooth evenly with a spatula.
  • Gently dollop the whipped cream on top of the pastry cream and carefully smooth with a spatula.
