Whether you prepare the prime rib at home using leftovers from earlier in the week or pick up a perfectly cooked cut from your local grocery store, this sandwich is a must-try. Prime rib is one of my favorite cuts of meat. Back when I was a teenager, my first job had us serving prime rib for our special Saturday and Sunday dinners. It was always a treat if there was any leftover on Sunday night. I can still remember my first bite of that tender, juicy cut of meat. How could it be this delicious? What had I been missing for my first 14 years of life? We often made sandwiches with this leftover meat, but not nearly as delicious as this recipe.

We started making these incredible prime rib sandwiches after my husband returned from a work trip in Fort Wayne Indiana. He raved about a sandwich he had at a local restaurant and insisted we recreate it at home. Thankfully, we did—it turned out to be absolutely delicious!

 

Prime Rib Sandwiches Preparation, Servings, and Storage

Prime rib sandwiches are easy to prepare with leftover prime rib and homemade hoagie rolls ready to be stuffed. The total time required to make four mouthwatering sandwiches is about thirty minutes.

The prepared sandwich should be eaten right away while it is still warm and the cheese is melty. All of the ingredients can be stored separately and reassembled for up to 4 days if necessary. Similar to the last step in preparation, the fully assembled leftovers of prime rib sandwich is wrapped in paper towel and microwaved to reheat and melt the cheese.

Ingredients
 

Creamy horseradish sauce

  • 1/2 cup Sour cream
  • 3 tbsp Mayonnaise
  • 2 tbsp Horseradish
  • 1 tbsp Apple cider vinegar
  • 1/8 tsp Mustard powder
  • 1/8 tsp Onion powder
  • 1/8 tsp Cayenne pepper
  • 1/8 tsp Sea salt
  • 1/8 tsp Black pepper

Beef and onions ingredients

  • 2 lbs Cold leftover Prime rib
  • 1 tbsp Blackened seasoning
  • 1/8 tsp Sea salt
  • 1/8 tsp Black pepper
  • 1 cup Sliced yellow onion
  • 2 tbsp Butter

Hoagie roll ingredients

Cheeses

  • 12 slices Provolone cheese
  • 1/2 cup Blue cheese crumbles

Instructions
 

Creamy horseradish sauce

  • In a medium sized mixing bowl, combine the sour cream, mayonnaise, horseradish, apple cider vinegar, mustard powder, onion powder, cayenne, salt, and pepper.
  • Cover and refrigerate for 30 minutes.

Caramelized onions and prime rib instructions

  • Cut the extra fat off of the prime rib and cut the meat into slices or cubes.
  • Season the beef with blackened seasoning, salt and pepper.
  • Melt the butter in a medium sized cast iron skillet over medium heat.
  • Add the onions to the skillet and sauté until soft and caramelized.
  • In the same skillet, lightly sear the prime rib slices just enough to re-warm the beef.

Hoagie roll instructions

  • Set the broiler on the oven to high.
  • Cut the (Italian Bread) hoagie rolls in half lengthwise, spread the butter on the cut side of the rolls and sprinkle garlic salt over the butter.
  • Broil until all the butter is melted and the bread is toasted.

Constructing the sandwiches

  • Spread the warm prime rib slices onto the hoagie rolls.
  • Evenly distribute the onions on top of the beef.
  • Add the blue cheese to each sandwich and top with 3 slices of provolone per sandwich.
  • Replace the top bun on the sandwich.
  • Wrap each sandwich in paper towel and microwave for 25-30 seconds each to melt the cheese.
  • Cut the sandwiches in half and serve with the creamy horseradish sauce in a small ramekin on the side for dipping.
