I have always loved the crisp, slight heat of radishes. Whether in a salad, a fresh vegetable tray, or in creamy cucumber radish salad– a couple radishes are always a delightful snack. In an effort to help my husband see their potential beyond his description of “spicy dirt apples,” I was on a mission to find great recipes incorporating radishes. Here’s the verdict, roasted radishes are amazingly different than we have ever tasted! Their flavor is exquisite, their texture wonderfully soft, and I might just have changed his mind about these little root vegetables.

Radishes are among the first root vegetables harvested in the spring, thriving in cooler temperatures. There’s nothing quite as joyful as watching the children in the household as they pull radishes from the garden. Their faces lighting up with excitement at the size and length of each root. We planted several radishes this spring, motivated by a need for sustainable pest control. After battling cucumber beetles that devastated our garden the previous year, I devised a plan, learning that these pests detest the scent of radishes. Equipment

Ingredients
 

  • 1 pound Red radishes, trimmed and cleaned
  • 1 tsp Olive oil
  • 1 sprig Rosemary
  • 1 clove Garlic

Instructions
 

  • Preheat the oven to 425℉.
  • Place the radishes on a sheet pan and spray with olive oil.
  • Toss the radishes around on the sheet pan to coat with the oil.
  • Add minced garlic and the rosemary sprig, toss again to mix the garlic in with the radishes.
  • Bake for 15 minutes or until the radishes are fork tender.
  • Serve immediately.
