Shrimp Louie Salad

I know I say so many times that one salad or another is one of my favorite recipes. And what’s not to love about a good salad for dinner? Shrimp Louie salad is definitely one of those favorites. It has so many fresh vibrant flavors and the dressing is perfect drizzled on top. Healthy, filling, and delicious, what more could you ask for?

What is Shrimp Louie Salad?

Shrimp Louie Salad is a vibrant, refreshing meal that has graced American menus for over a century. Known for its bright presentation, crisp vegetables, and rich, creamy dressing, Shrimp Louie combines the elegance of seafood with the simplicity of a traditional salad. Whether served as a light lunch or dinner on a hot summer night, this salad continues to be a favorite for its balance of flavors, textures, and nostalgic charm.

This delightful salad first gained popularity in the early 20th century, particularly in California. While its exact origin remains unknown, it is widely believed to have originated in San Francisco. The salad reflects the bountiful seafood from the Pacific coast and the rising trend of composed salads. It likely evolved from similar seafood dishes favored in upscale dining rooms of the era. Some say it was first served at Solari’s Restaurant in San Francisco around 1914, while others suggest its beginnings trace back to Seattle. Over the years, Shrimp Louie has become a staple of American cuisine, especially during the 1920s and 1930s. Despite various adaptations, it retains its essence: a bed of lettuce topped with shrimp and vegetables, accompanied by a tangy, mayonnaise-based Louie dressing.

Shrimp Louie Salad Ingredients

What makes Shrimp Louie distinctive is the combination of fresh, simple ingredients paired with a rich, creamy dressing. As with all the salads we prepare, this also is made with the freshest, most natural ingredients minimizing preservatives and additives. Here’s a breakdown of the essential ingredients:

Shrimp

In this recipe we use Argentine red shrimp. This is for many reasons, most importantly, because they are wild caught. They have a firmer texture and more pronounced sweet, briny flavor due to their natural ocean diet and lifestyle. Wild caught shrimp eat a varied diet (plankton, algae, small fish), which contributes to better flavor and more omega-3 fatty acids. Because they’re harvested from the wild, they’re generally not treated with antibiotics, unlike farmed shrimp. Additionally, Argentine red shrimp are known for their lobster-like sweetness and have a more robust flavor than that of farm-raised shrimp. This natural sweetness enhances the other flavors in the shrimp Louie salad.  They are naturally bright reddish-pink even when raw, and they deepen slightly in color when cooked. Their visual appeal enhances presentation, making your Shrimp Louie Salad visually stunning.

Lettuce

Using romaine lettuce in a Shrimp Louie salad is a smart choice for several reasons. Romaine lettuce offers a crunchy bite, similar to iceberg, but with a bit more structure. This helps it hold up better than other lettuces under the creamy Louie dressing. Romaine has a subtle, slightly bitter, earthy flavor that complements the richness of the shrimp and dressing without overpowering them. It adds more complexity to each bite. Compared to other lettuces such as iceberg, romaine contains more vitamins (especially A, K, and folate), higher fiber, and antioxidants.

Tomatoes

Cherry tomatoes, with their naturally sweet and tangy flavor, provide a vibrant balance against the richness of the dressing and enhance the shrimp’s sweetness. Their bite-sized shape makes them perfect for this fork-friendly salad, while their firm texture ensures the salad remains fresh and not soggy. The bright red color of cherry tomatoes adds a beautiful pop that harmonizes with the pink shrimp, green lettuce, and creamy dressing.

Hard-Boiled Eggs

Hard-boiled eggs are a remarkable ingredient in Shrimp Louie salad, included for well-balanced reasons—both culinary and nutritional. Though they may seem humble, they play a crucial role in rounding out this beautiful salad. Hard-boiled eggs contribute a soft, creamy texture that contrasts beautifully with the crisp lettuce and firm shrimp. The yolks provide a grainy richness that enhances the smooth Louie dressing, adding depth to every bite. Their savory flavor bridges the bright tanginess of the dressing and the sweetness of the shrimp, mellowing out sharper components while contributing a gentle umami note. While shrimp offers lean protein, the addition of eggs makes the salad even more satisfying as a meal. Quartered hard-boiled eggs is the classic presentation of shrimp Louie salad, with their white-and-yellow contrast popping against green lettuce, red tomatoes, and pink shrimp, creating a traditional, elegant appearance.

Avocado

Adding avocado to a Shrimp Louie salad enhances both the flavor and nutritional profile. Avocado offers a buttery, melt-in-your-mouth texture that balances the crunch of lettuce, the firmness of shrimp, and the silkiness of the Louie dressing. Its natural creaminess blends beautifully with the dressing without making the salad soggy. Avocado has a subtle, nutty flavor that complements rather than competes with the other ingredients. It enhances the shrimp’s sweetness, as well as softens the acidity of tomatoes and Louie dressing.

Rich in heart-healthy monounsaturated fats, avocados promote satiety, making the salad more filling, while aiding in the absorption of fat-soluble vitamins from other ingredients. They offer fiber for digestion, potassium, and a wealth of vitamins—C, E, K, and B6.

Radishes

Adding radishes to a Shrimp Louie salad brings vibrant crunch, color, and a peppery bite. This ultra-crunchy vegetable contrasts excellently with tender shrimp, creamy avocado, dressing, and soft egg yolks. Their crisp snap enhances each bite while lightening up the salad’s overall feel. Radishes bring a mildly spicy, peppery flavor that cuts through the richness of the Louie dressing. They are light, hydrating, and add volume and nutrition without heaviness. These delightful veggies enrich the salad with Vitamin C, antioxidants, and fiber, ensuring a crisp and healthy salad.

Louie Dressing

The Louie dressing is a creamy, tangy blend of mayonnaise, ketchup, Dijon mustard, horseradish, Worcestershire sauce, chives, and black pepper. It’s similar to Thousand Island but less sweet and with more zesty bite. Seriously, that dressing though- it is the perfect topping with these fresh ingredients.

Preparation, Servings, and Storage

Preparing Shrimp Louie Salad is as much about presentation as it is about flavor. Here’s how to bring it all together:

  1. Prepare the shrimp: Sear the seasoned shrimp in a cast iron skillet. Allow to cool before topping the salad.

  2. Make the dressing: In a bowl, whisk together mayonnaise, ketchup, Dijon, horseradish Worcestershire, chives, and black pepper.

  3. Prepare the vegetables: Wash and dry the lettuce thoroughly. Slice the avocados, radishes, and eggs.

  4. Assemble the salad: Arrange a generous bed of lettuce on a plate or shallow bowl. Neatly place shrimp, eggs, tomatoes, avocado, and radishes over the top. Spoon the Louie dressing over the salad or serve it on the side.

This recipe yields four fresh, vibrant dinner salads. If there are any leftovers, or for meal prep, divide the remaining ingredients into glass storage containers with the dressing stored separately. It can be refrigerated for up to 4 days.
