Strawberry Lemonade Blondies

 

We love getting out into the field and picking fresh produce. There is nothing better than a fresh strawberry right off the plant- it just melts in your mouth. There are so many delicious treats that can be made with strawberries, fresh or frozen.

These strawberry lemonade blondies are so good! Soft, delicate blondies, with bits of strawberries, topped with a tart strawberry lemon icing. The first comment I got after the kids tried them was “I know what I’ll be having for breakfast tomorrow morning!”

This recipe is baked in a 13×9 baking dish. It is a great dessert to bring to a potluck, serve at parties, or apparently have for breakfast. I made this for a bake sale and people around here were not happy about having to share! Guess I will be making another batch soon!

Strawberry Lemonade Blondies

Equipment

  • 1 large mixing bowl with
  • 1 Small saucepan
  • 1 small mixing bowl
  • 13x9 glass baking dish

Ingredients
  

Blondie batter

  • 1 cup Strawberries, diced (fresh or frozen)
  • 2 cups Sugar
  • 2/3 Cup Butter, room temperature
  • 1/4 cup Lemon juice
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 2 cup All purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda

Glaze

  • 1 tbsp Strawberry juice (about 1/4 cup strawberries)
  • 2 tbsp Lemon juice
  • 1 cup Powdered sugar

Instructions
 

Blondie Batter

  • Preheat the oven to 350℉
  • In a large mixing bowl, combine sugar, butter and lemon juice until soft and fluffy.
  • Stir in eggs and vanilla until combined.
  • Add flour, baking powder and baking soda to the bowl and stir to combine all ingredients.
  • Gently fold in the diced strawberries being careful not to smash or crush them.
  • Pour the batter into a greased 13x9 glass baking dish.
  • Bake for 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Once the blondies are baked through, remove from the oven and allow to cool in the baking dish for at least 1 hour before glazing.

Glaze

  • In a small saucepan, heat the strawberries until soft. Smash the strawberries with a masher to release all the juices.
  • Using a small mesh strainer, strain the strawberries into a small mixing bowl to remove the juice.
  • Add the lemon juice and powdered sugar to the strawberry juice.
  • Whisk the ingredients to make a smooth glaze.
  • Once the blondies are cooled, drizzle the glaze over the top. Can be served immediately or stored in an airtight container at room temperature for up to 4 days.
