There are so many great things to make with fresh strawberries. Strawberry spinach salad is one of my favorites to enjoy the fresh, melt in your mouth berries. If you follow my Facebook page, you saw that we had a successful day in the strawberry field. With the help of my four kids, niece, nephew, and mom, we braved the summer heat and brought home 60 pounds of berries! Split between three families, I of course, had to go back for another 10 pounds. Mostly because I had to replenish what the kids snacked on over the course of a week!

Using seasonal strawberries is not only way more delicious but also supports local farmers and reduces your carbon footprint. It’s a small but meaningful way to eat more sustainably. As with the rest of my 30 pounds minus a few, I have been busy making strawberry jam, strawberry simple syrup, strawberry cake, and strawberry lemonade blondies. I also froze some for strawberry treats later in the year!

Eat More Strawberries!

Fresh strawberries are more than just a sweet summer treat—they’re full of nutrients that support your entire body. Strawberries are loaded with antioxidants which help protect your cells from oxidative stress. Why Make Strawberry Spinach Salad?

I have to admit, the first time I made this, my husband was a little leery. He had never had a salad with fruit as the main attraction but guess what! I made him a believer!! The sweetness of fresh ripe strawberries perfectly complements the earthy, slightly bitter notes of fresh spinach. A bit of bold, crispy spice is brought in with just a few slices of red onion. Add in the creamy tang of feta cheese, the crunch of almonds and a drizzle of sweet poppy seed dressing, and you’ve got a salad that hits every flavor note—sweet, savory, tangy, and nutty.

Beyond its taste, all the ingredients in this salad are full of nutrients. Spinach is loaded with vitamins A, C, and K, as well as iron and fiber. Strawberries bring antioxidants, vitamin C, and natural sweetness without added sugar. Nuts contribute healthy fats and protein, while cheese adds calcium and richness. This salad is one of those as healthy as it gets yet still tastes delicious.

It takes ten minutes, that it, to chop up the fresh strawberries, shake up the dressing, and throw these ingredients together. No hot oven- it’s a cold, yet flavorful meal. This recipe yields four colorful salads that will surely impress your family or guests. It can also be prepared as a side salad and serve six! Want to double it for a larger group? No problem! It is even a great meal prep for the week.

The ingredients should be stored separately in airtight containers in the refrigerator for up to 5 days. Store the berries and spinach in glass containers as glass keeps produce fresh for longer than plastic.

Ingredients
 

  • 8 Large fresh strawberries, sliced
  • 6 cups Fresh spinach leaves
  • 4 slices Red onion
  • 1/2 cup Sliced almonds
  • 1/2 cup Feta cheese

Dressing

  • 1 cup Mayonnaise
  • 1/4 cup Honey
  • 1/4 cup White wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp Onion powder
  • 2 tsp Poppyseeds

Instructions
 

  • Prepare the dressing by combining in a dressing jar:
    1 cup Mayonnaise
    1/4 cup Honey
    1/4 cup White wine vinegar
    1 tsp Dijon mustard
    1/4 tsp Onion powder
    2 tsp Poppyseeds
    Shake the jar vigorously to combine. Refrigerate while preparing the salad.
  • Evenly distribute the spinach into 4 salad serving plates.
  • Top the salad with 2 sliced strawberries each, along with the red onion, sliced almonds and feta cheese.
  • Serve immediately with the dressing on the side.
