Ingredients
 

  • 1 pound Shredded chicken
  • 4 Flour tortillas
  • 3 tbsp Peanut butter
  • 3 tbsp Honey
  • 2 tbsp Rice vinegar
  • 2 tsp Soy sauce
  • 1/2 tsp Sesame oil
  • 1/4 cup Cilantro, chopped
  • 1/2 tsp Ginger, freshly grated
  • 1 clove Garlic, minced
  • 1/4 tsp Crushed red pepper
  • 1/4 tsp Black pepper
  • 1 cup Shredded cabbage
  • 1/4 cup Shredded carrots
  • 1/4 cup Peanuts

Instructions
 

  • In a large mixing bowl, combine:
    3 tbsp Peanut butter
    3 tbsp Honey
    2 tbsp Rice vinegar
    2 tsp Soy sauce
    1/2 tsp Sesame oil
    1/4 cup Cilantro, chopped
    1/2 tsp Ginger, freshly grated
    1 clove Garlic, minced
    1/4 tsp Crushed red pepper
    1/4 tsp Black pepper
  • Add the shredded chicken to the mixed sauce and stir to coat the chicken.
  • Lay the flour tortillas on a large work surface and spread 1/4 cup of cabbage, 1 tbsp of carrots, 1 tbsp of peanuts and 1/4 of the chicken down the middle of each tortilla.
  • Fold over the sides of the tortillas 1 inch on each side and roll tightly to wrap the ingredients. Serve immediately.
