In a medium sized bowl, soak the shrimp in the milk.
In a second bowl, combine the panko, tapioca flour, onion powder, garlic powder, sea salt, and black pepper.
Heat the avocado oil in a large cast iron skillet over medium heat.
In the third bowl, stir to combine the mayonnaise, vinegar, sweet chili sauce, agave syrup, garlic powder, and crushed red pepper. Set aside.
Once the oil is hot, dip the shrimp, one at a time into the flour bowl, coating the shrimp in flour. Place the shrimp into the skillet and fry for 4-5 minutes per side.
Remove cooked shrimp from the skillet to a paper towel lined plate. Once all the shrimp are cooked, serve immediately.
