1½ cups Dry rice 3 cups Water 2 tbsp Avocado oil 1 pound Broccoli 1 pound Flank steak
Rinse and drain the rice in a 2 quart saucepan.
Add the water and bring to a boil, stirring occasionally to prevent sticking.
Once the water comes to a boil, turn the heat down to low, cover and cook for 15 minutes.
Heat the avocado oil in a large cast iron skillet over medium high heat.
Add the flank steak, stirring often.
Once the steak is half cooked (about 3 minutes), add the broccoli to the skillet.
Continue searing and stirring for 4-5 minutes.
Pour the sauce over the broccoli and beef, stirring to coat the meat and vegetables with sauce. Allow to simmer for 2-3 minutes to thicken the sauce.
Remove the skillet from the heat and serve immediately over steamed rice.
