In a small cast iron skillet, melt the butter over medium heat.
Add the onion slices and cook until caramelized.
Butter the bread on one side and place butter side down on the griddle.
Place the cheese on the bread. On one slice add the caramelized onions, pickles, and brisket.
Once both bread slices are toasted, place the cheese only slice on top of the loaded slice and remove from the griddle.
Cut the sandwich in half and serve with BBQ sauce on the side. The BBQ sauce can also be added to the sandwich while cooking on the griddle, if desired.
