Caesar Dressing
- 1 cup Homemade mayonnaise
- 3 tbsp Lemon juice
- 1 tsp White wine vinegar
- 2 tbsp Extra virgin olive oil
- 1 clove Garlic, minced
- 1 tsp Anchovy paste
- 1 tsp Sea salt
- 1 tsp Black pepper
- 1/2 cup Parmesan cheese, freshly grated
Salad Ingredients
- 2 Chicken breasts
- 2 Romaine lettuce, chopped
- 1 Pint Cherry tomatoes
- Homemade croutons
- 1 Lemon (cut into 8 wedges)
- 1/2 cup Parmesan cheese, freshly shredded
Combine mayonnaise, lemon juice, vinegar, EVOO, garlic, anchovy paste, salt, and pepper in a mixing bowl.
Fold in the parmesan cheese and refrigerate until ready to serve.
Preheat the grill to medium high heat.
Lightly season the chicken breasts with salt and pepper. Grill the chicken for 7-8 minutes per side or until the internal temperature is 165℉.
Remove the chicken from the grill and tent with foil while preparing the salads.
Fill each serving plate with romaine lettuce. Top the salad with tomatoes, croutons, 2 lemon wedges each and freshly shredded parmesan.
Slice the grilled chicken and add to the salads.
Serve with dressing on the side.
