Ingredients
 

Caesar Dressing

  • 1 cup Homemade mayonnaise
  • 3 tbsp Lemon juice
  • 1 tsp White wine vinegar
  • 2 tbsp Extra virgin olive oil
  • 1 clove Garlic, minced
  • 1 tsp Anchovy paste
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 1/2 cup Parmesan cheese, freshly grated

Salad Ingredients

  • 2 Chicken breasts
  • 2 Romaine lettuce, chopped
  • 1 Pint Cherry tomatoes
  • Homemade croutons
  • 1 Lemon (cut into 8 wedges)
  • 1/2 cup Parmesan cheese, freshly shredded

Instructions
 

  • Combine mayonnaise, lemon juice, vinegar, EVOO, garlic, anchovy paste, salt, and pepper in a mixing bowl.
  • Fold in the parmesan cheese and refrigerate until ready to serve.
  • Preheat the grill to medium high heat.
  • Lightly season the chicken breasts with salt and pepper. Grill the chicken for 7-8 minutes per side or until the internal temperature is 165℉.
  • Remove the chicken from the grill and tent with foil while preparing the salads.
  • Fill each serving plate with romaine lettuce. Top the salad with tomatoes, croutons, 2 lemon wedges each and freshly shredded parmesan.
  • Slice the grilled chicken and add to the salads.
  • Serve with dressing on the side.
