  • 4 Chicken breasts
  • 1 Green onion
  • 2 cloves Garlic
  • 2 tbsp Parsley, chopped
  • 1/4 cup Butter, cold
  • 1/2 cup Flour
  • 2 Eggs, beaten
  • 1/2 cup Breadcrumbs
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 tbsp avocado oil

Instructions
 

  • Using a meat mallet, pound the chicken breasts to 1/2 inch thick.
  • Season the chicken with salt and pepper.
  • Divide the green onions, garlic, and parsley evenly among the 4 chicken breasts, spreading down the middle.
  • Cut the butter into 4 pieces and place one in the center of each chicken breast.
  • Roll the chicken tightly over the butter and secure with toothpicks.
  • Gently roll the chicken in the flour, egg, and breadcrumbs.
  • Place the breaded chicken on a plate, cover with plastic wrap and refrigerate for at least 30 minutes.
  • Preheat the oven to 400℉.
  • Heat 2 tbsp avocado oil in a large cast iron skillet over medium heat.
  • Brown the rolled, breaded chicken in the skillet on all sides.
  • Once the chickens are browned, place the skillet into the oven to finish cooking.
  • Bake for 20 minutes or until the internal temperature is 170℉.
  • Remove from the oven and allow to cool 5 minutes before serving.
