2 tbsp Olive oil 1 cup Yellow onion, diced 3 cloves Garlic, minced 4 cups Chicken broth 1 cup Heavy cream 2 cups Diced tomatoes 1/4 cup Sun dried tomatoes 1 tsp Italian seasoning 1/2 tsp Crushed red pepper 1/2 tsp Sea salt 1/2 tsp Black pepper 1 20 oz package Cheese Tortellini 1 pound Chicken, cooked and shredded 1 cup Fresh spinach 1/2 cup Parmesan cheese, freshly shredded
Heat olive oil over medium in a Dutch oven or large soup pot.
Add the diced onions and sauté until soft and translucent.
Add the minced garlic and continue to cook for 1 minute.
Add the chicken broth, heavy cream, diced tomatoes, sun dried tomatoes, italian seasoning, crushed red pepper, sea salt, and black pepper to the pot.
Simmer for 20 minutes, stirring occasionally.
Add the tortellini to the pot and simmer for 3-4 minutes.
While the tortellini is simmering, add the shredded chicken and spinach.
Remove from the heat and serve immediately with parmesan cheese on top of each bowl.
