Ingredients
 

  • 2 tbsp Olive oil
  • 1 cup Yellow onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 cups Diced tomatoes
  • 1/4 cup Sun dried tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp Crushed red pepper
  • 1/2 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 20 oz package Cheese Tortellini
  • 1 pound Chicken, cooked and shredded
  • 1 cup Fresh spinach
  • 1/2 cup Parmesan cheese, freshly shredded

Instructions
 

  • Heat olive oil over medium in a Dutch oven or large soup pot.
  • Add the diced onions and sauté until soft and translucent.
  • Add the minced garlic and continue to cook for 1 minute.
  • Add the chicken broth, heavy cream, diced tomatoes, sun dried tomatoes, italian seasoning, crushed red pepper, sea salt, and black pepper to the pot.
  • Simmer for 20 minutes, stirring occasionally.
  • Add the tortellini to the pot and simmer for 3-4 minutes.
  • While the tortellini is simmering, add the shredded chicken and spinach.
  • Remove from the heat and serve immediately with parmesan cheese on top of each bowl.
