The kids call them “reverse chocolate cookies” because the cookie itself is chocolate while the chips are white.   • In a stand mixer, beat the butter and sugar until light and fluffy.
  • Add the brown sugar and beat again.
  • Add in the eggs and vanilla. Beat until combined.
  • Measure in the flour, cocoa powder, sea salt, and baking soda into the mixing bowl.
  • Mix on low speed until just combined.
  • Remove the bowl from the mixer and mix in the white chocolate chips with a spatula.
  • Refrigerate the dough for at least 1 hour.
  • Preheat the oven to 350℉.
  • Line the sheet pans with parchment paper.
  • Remove the dough from the refrigerator and drop the dough onto the sheet pans, 12 per sheet pan.
  • Bake in the preheated oven for 12-13 minutes.
  • Remove to a cooling rack and allow to cool for at least 15 minutes before serving.
