Coconut Lime Cookies

1 cup Butter, softened 2 cups Sugar 2 Eggs 2 tsp Vanilla extract 1 Lime, juiced and zested 3 cups Flour 1 tsp Baking powder 1/2 tsp Sea salt 1/2 tsp Baking soda 2 cups Unsweetened Shredded Coconut 1/2 cup Powdered sugar 1-2 tbsp Lime juice
In a large mixing bowl or stand mixer, beat the butter and sugar until light and fluffy.
Add in the eggs, vanilla, lime juice and half of the lime zest.
Mix again until all the ingredients are combined.
Add the flour, baking powder, salt, and baking soda. Gently fold until just combined.
Gently fold in the coconut.
Cover the bowl and refrigerate for one hour.
Preheat the oven to 350℉.
Roll the dough into equal portioned balls, about 1½-2 tbsp each.
Place the dough balls 2 inches apart onto parchment paper lined sheet pans.
Bake for 12-13 minutes.
Remove the cookies from the oven and allow to cool on the sheet pan for 5 minutes before transferring to a cooling rack.
In a small bowl, mix the powdered sugar and 1-2 tbsp of lime juice.
Drizzle the lime icing over the cooled cookies. Sprinkle the remaining zest on top of the iced cookies.
