Coconut Lime Cookies

Ingredients
 

  • 1 cup Butter, softened
  • 2 cups Sugar
  • 2 Eggs
  • 2 tsp Vanilla extract
  • 1 Lime, juiced and zested
  • 3 cups Flour
  • 1 tsp Baking powder
  • 1/2 tsp Sea salt
  • 1/2 tsp Baking soda
  • 2 cups Unsweetened Shredded Coconut
  • 1/2 cup Powdered sugar
  • 1-2 tbsp Lime juice

Instructions
 

  • In a large mixing bowl or stand mixer, beat the butter and sugar until light and fluffy.
  • Add in the eggs, vanilla, lime juice and half of the lime zest.
  • Mix again until all the ingredients are combined.
  • Add the flour, baking powder, salt, and baking soda. Gently fold until just combined.
  • Gently fold in the coconut.
  • Cover the bowl and refrigerate for one hour.
  • Preheat the oven to 350℉.
  • Roll the dough into equal portioned balls, about 1½-2 tbsp each.
  • Place the dough balls 2 inches apart onto parchment paper lined sheet pans.
  • Bake for 12-13 minutes.
  • Remove the cookies from the oven and allow to cool on the sheet pan for 5 minutes before transferring to a cooling rack.
  • In a small bowl, mix the powdered sugar and 1-2 tbsp of lime juice.
  • Drizzle the lime icing over the cooled cookies. Sprinkle the remaining zest on top of the iced cookies.
