Ingredients
 

  • 1/4 cup Butter, melted
  • 1 cup Milk
  • 2 Eggs
  • 1 tsp Hot sauce
  • 1 cup Flour
  • 3/4 cup Cornmeal
  • 2 tbsp Sugar
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 cup Corn
  • 1/2 cup Cheddar cheese, freshly shredded
  • 1 Jalapeño, diced (optional)

Instructions
 

  • Preheat the oven to 400°F.
  • Grease the muffin pan.
  • Melt the butter in a large mixing bowl.
  • Add the milk, eggs, and hot sauce. Whisk to combine.
  • Add the flour, cornmeal, sugar, sea salt, and black pepper. Fold the batter with a spatula to combine all the ingredients.
  • Stir in the corn, jalapeno, and cheese.
  • Fill each muffin cup 2/3 full of batter.
  • Bake in the preheated oven for 15 minutes or until a toothpick inserted in the middle comes out clean.
  • Allow to cool for 10 minutes before removing the muffins form the pan to a cooling rack.
