- 1/4 cup Butter, melted
- 1 cup Milk
- 2 Eggs
- 1 tsp Hot sauce
- 1 cup Flour
- 3/4 cup Cornmeal
- 2 tbsp Sugar
- 1/2 tsp Sea salt
- 1/4 tsp Black pepper
- 1 cup Corn
- 1/2 cup Cheddar cheese, freshly shredded
- 1 Jalapeño, diced (optional)
Preheat the oven to 400°F.
Grease the muffin pan.
Melt the butter in a large mixing bowl.
Add the milk, eggs, and hot sauce. Whisk to combine.
Add the flour, cornmeal, sugar, sea salt, and black pepper. Fold the batter with a spatula to combine all the ingredients.
Stir in the corn, jalapeno, and cheese.
Fill each muffin cup 2/3 full of batter.
Bake in the preheated oven for 15 minutes or until a toothpick inserted in the middle comes out clean.
Allow to cool for 10 minutes before removing the muffins form the pan to a cooling rack.
