French Dip

Ingredients
 

  • 2 tbsp Butter
  • 1 pound Mushrooms (sliced)
  • 1/2 Large yellow onion, sliced
  • 1 clove Garlic, minced
  • 1 pound Roast beef, deli sliced
  • 8 slices Provolone cheese
  • 4 Hoagie rolls (homemade)
  • 2 cups Au Jus (see note)

Instructions
 

  • Preheat the broiler on high.
  • Melt the butter in a large cast iron skillet over medium heat.
  • Add the mushrooms, onions, and garlic to the skillet and sauté until soft, about 10 minutes.
  • While the vegetables are sautéing, pour the au jus into a small saucepan and bring to a slow simmer.
  • Place the sliced roast beef into the au jus sauce to warm while the hoagie rolls are toasting.
  • Cut the hoagie rolls in half and toast cut side up for 3-4 minutes or until golden.
  • Remove the rolls from the oven and place warm roast beef slices on the rolls.
  • Top with sauteed mushrooms and onions and 2 slices of cheese per sandwich.
  • Place the top bun on the sandwich, cut in half and serve immediately with a small bowl of au jus.

Notes

Use a high-quality au jus sauce for the best flavor. The term "au jus" is a thin sauce made from the natural juices of roast beef. When you make a roast, deglaze the pan with beef broth, skim the fat, and use immediately or save it for French dip sandwiches.
