- 1/4 cup Avocado Oil
- 2 Zucchini (about 8-10 inches long)
- 1/2 cup Flour
- 1 tsp Sea salt
- 1 tsp Black pepper
- 4 Eggs (beaten)
- 1/3 cup Panko
- 1 cup Plain bread crumbs
- 1/4 cup Parmesan cheese, freshly grated
In a large cast iron skillet, heat avocado oil over medium/medium high heat.
Slice zucchini 1/4-1/2 inch thick.
Set up a breading station:1: flour, sea salt, black pepper2: Eggs, beaten3: panko, plain bread crumbs, parmesan cheese Dip the zucchini slices in the flour, egg, then bread crumbs and place in the hot oil.
Fry for 1-2 minutes on each side or until golden brown and crispy.
Remove to a paper towel lined plate and continue breading and frying until all of the zucchini slices are fried.
Serve immediately with ranch or marinara sauce.
