  • 1/4 cup Avocado Oil
  • 2 Zucchini (about 8-10 inches long)
  • 1/2 cup Flour
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 4 Eggs (beaten)
  • 1/3 cup Panko
  • 1 cup Plain bread crumbs
  • 1/4 cup Parmesan cheese, freshly grated

Instructions
 

  • In a large cast iron skillet, heat avocado oil over medium/medium high heat.
  • Slice zucchini 1/4-1/2 inch thick.
  • Set up a breading station:
    1: flour, sea salt, black pepper
    2: Eggs, beaten
    3: panko, plain bread crumbs, parmesan cheese
  • Dip the zucchini slices in the flour, egg, then bread crumbs and place in the hot oil.
  • Fry for 1-2 minutes on each side or until golden brown and crispy.
  • Remove to a paper towel lined plate and continue breading and frying until all of the zucchini slices are fried.
  • Serve immediately with ranch or marinara sauce.
