Ingredients
 

  • 1/2 cup Butter, softened
  • 1 cup Sugar
  • 1 Egg
  • 1/4 cup Molasses
  • 2 cups Flour
  • 2 tsp Baking soda
  • 1/2 tsp Sea salt
  • 1/2 tsp Cloves, ground
  • 1/2 tsp Ginger, ground
  • 1 tsp Cinnamon, ground
  • 2 tbsp Sugar (for rolling before baking)

Instructions
 

  • In a large mixing bowl or stand mixer, beat the sugar and butter until light and fluffy.
  • Add the egg and molasses and stir until combined.
  • Fold in the flour, baking soda, sea salt, cloves, ginger, and cinnamon.
  • Cover the bowl and refrigerate for at least one hour. (Overnight is best)
  • Preheat the oven to 375 °F.
  • Remove the dough from the oven and allow to sit at room temperature while the oven is preheating. Line the sheet pans with parchment paper.
  • Roll the dough in to small 1-2 inch balls.
  • Place one ball at a time into the bowl of sugar, coating all sides.
  • Evenly space 12 cookies onto a sheet pan and bake for 8-10 minutes.
  • Remove the cookies from the oven and allow to cool on the sheet pan briefly before transferring to a cooling rack.
  • Once the cookies are completely cool, mix the powdered sugar, vanilla, and milk. Drizzle over the top and allow to dry before serving or storing.
