- 1 pound Chicken breasts
- 2 Romaine lettuce, chopped
- 1 Large ripe nectarine
- 1/2 cup Red onion, thinly sliced
- 1 cucumber, sliced
- 1/2 cup Toasted pecans
- 6 oz Goat cheese, crumbled
Vinaigrette Dressing
- 1/2 cup Extra virgin olive oil
- 1/4 cup White wine vinegar
- 2 tbsp Honey
- 2 tsp Dijon mustard
- 1/4 tsp Sea salt
- 1/2 tsp Black pepper
Preheat the grill to medium high heat.
Pound the chicken breasts to an even thickness, lightly season with salt and pepper, and place on the grill.
Grill the chicken for 7-8 minutes per side, or until the internal temperature is 165℉.
Remove the chicken to a clean plate and cover with foil.
Place the lettuce in four salad serving bowls. Top each salad with thin sliced nectarines, red onions, cucumber, toasted pecans, and goat cheese.
Slice the chicken and place a few thin slices on top of the salads.
In a small dressing jar, combine the EVOO, vinegar, honey, dijon, salt and pepper. Shake vigorously to combine the dressing.
Serve immediately with the dressing on the side.
