Ingredients
 

  • 1 pound Chicken breasts
  • 2 Romaine lettuce, chopped
  • 1 Large ripe nectarine
  • 1/2 cup Red onion, thinly sliced
  • 1 cucumber, sliced
  • 1/2 cup Toasted pecans
  • 6 oz Goat cheese, crumbled

Vinaigrette Dressing

  • 1/2 cup Extra virgin olive oil
  • 1/4 cup White wine vinegar
  • 2 tbsp Honey
  • 2 tsp Dijon mustard
  • 1/4 tsp Sea salt
  • 1/2 tsp Black pepper

Instructions
 

  • Preheat the grill to medium high heat.
  • Pound the chicken breasts to an even thickness, lightly season with salt and pepper, and place on the grill.
  • Grill the chicken for 7-8 minutes per side, or until the internal temperature is 165℉.
  • Remove the chicken to a clean plate and cover with foil.
  • Place the lettuce in four salad serving bowls. Top each salad with thin sliced nectarines, red onions, cucumber, toasted pecans, and goat cheese.
  • Slice the chicken and place a few thin slices on top of the salads.
  • In a small dressing jar, combine the EVOO, vinegar, honey, dijon, salt and pepper. Shake vigorously to combine the dressing.
  • Serve immediately with the dressing on the side.
