Ingredients
 

  • 4 tbsp Butter
  • 1 Yellow onion, diced
  • 2 Jalapeños, diced
  • 1/2 Green pepper, diced
  • 1/2 Red pepper, diced
  • 4-5 cloves Garlic
  • 1/4 cup Flour
  • 4 cups Chicken broth
  • 2 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 cups Diced tomatoes
  • 1 pound Chicken breast
  • 2 cups Cheddar cheese, freshly shredded
  • 1/2 cup Cilantro, chopped

Instructions
 

  • In a dutch oven or large stock pot, melt the butter over medium heat.
  • Add the onions, jalapeños, bell peppers, and garlic to the pot and sauté until the vegetables are soft.
  • Stir in the flour and cook for 2-3 minutes, coating all the vegetables with the flour mixture.
  • Slowly whisk in the chicken broth,
  • Add the chili powder, cumin, salt, pepper, diced tomatoes, and chicken.
  • Simmer the soup for 20 minutes to cook the chicken.
  • Once the chicken is cooked through, remove from the soup and allow to cool slightly on a cutting board. Shred the chicken and return it to the soup.
  • Remove the pot from the heat and slowly stir in the cheese a little at a time. Leaving 1/2 cup of the cheese for topping the soup
  • Serve immediately, topping each bowl with a bit of cheese and fresh cilantro.
