- 4 tbsp Butter
- 1 Yellow onion, diced
- 2 Jalapeños, diced
- 1/2 Green pepper, diced
- 1/2 Red pepper, diced
- 4-5 cloves Garlic
- 1/4 cup Flour
- 4 cups Chicken broth
- 2 tbsp Chili powder
- 1 tbsp Cumin
- 1 tsp Sea salt
- 1/4 tsp Black pepper
- 2 cups Diced tomatoes
- 1 pound Chicken breast
- 2 cups Cheddar cheese, freshly shredded
- 1/2 cup Cilantro, chopped
In a dutch oven or large stock pot, melt the butter over medium heat.
Add the onions, jalapeños, bell peppers, and garlic to the pot and sauté until the vegetables are soft.
Stir in the flour and cook for 2-3 minutes, coating all the vegetables with the flour mixture.
Slowly whisk in the chicken broth,
Add the chili powder, cumin, salt, pepper, diced tomatoes, and chicken.
Simmer the soup for 20 minutes to cook the chicken.
Once the chicken is cooked through, remove from the soup and allow to cool slightly on a cutting board. Shred the chicken and return it to the soup.
Remove the pot from the heat and slowly stir in the cheese a little at a time. Leaving 1/2 cup of the cheese for topping the soup
Serve immediately, topping each bowl with a bit of cheese and fresh cilantro.
