- 1 pound Ground beef
- 2 cloves Garlic, minced
- 1/2 tbsp Sugar
- 1/2 tsp Ground ginger
- 1/4 tsp Black pepper
- 1 tsp Sesame oil
- 1 tbsp Honey
- 1/2 cup Soy sauce
- 2 Green onions, diced
- Sesame seeds
- 1/2 cup Pickled red onions
- 2 Large Zucchini
- 2 tsp Sea salt
Preheat the oven to 350℉.
Slice 2 large zucchini lengthwise and remove the seeds. Place the zucchini on a sheet pan, green (skin) side down.
Sprinkle sea salt over the zucchini to draw out the water. Allow to sit for 15 minutes.
Dab the zucchini with a paper towel to soak up the water that came out of the zucchini while resting.
Bake in the preheated oven for 20 minutes.
While the zucchini is baking, heat the cast iron skillet over medium to medium high heat.
Brown the ground beef, chopping as it browns to obtain small pieces.
Add the garlic, sugar, ground ginger, black pepper, sesame oil, honey, soy sauce and one green onion to the skillet.
Once the zucchini has baked for 20 minutes, and the ground beef is cooked through, fill the zucchini boats with the Korean beef mixture.
Sprinkle sesame seed on top of each boat and bake for 10 minutes.
Remove the zucchini boats from the oven and serve immediately topped with freshly diced green onions and pickled red onions.
