Korean Beef Zucchini Boats

Ingredients
 

  • 1 pound Ground beef
  • 2 cloves Garlic, minced
  • 1/2 tbsp Sugar
  • 1/2 tsp Ground ginger
  • 1/4 tsp Black pepper
  • 1 tsp Sesame oil
  • 1 tbsp Honey
  • 1/2 cup Soy sauce
  • 2 Green onions, diced
  • Sesame seeds
  • 1/2 cup Pickled red onions
  • 2 Large Zucchini
  • 2 tsp Sea salt

Instructions
 

  • Preheat the oven to 350℉.
  • Slice 2 large zucchini lengthwise and remove the seeds. Place the zucchini on a sheet pan, green (skin) side down.
  • Sprinkle sea salt over the zucchini to draw out the water. Allow to sit for 15 minutes.
  • Dab the zucchini with a paper towel to soak up the water that came out of the zucchini while resting.
  • Bake in the preheated oven for 20 minutes.
  • While the zucchini is baking, heat the cast iron skillet over medium to medium high heat.
  • Brown the ground beef, chopping as it browns to obtain small pieces.
  • Add the garlic, sugar, ground ginger, black pepper, sesame oil, honey, soy sauce and one green onion to the skillet.
  • Once the zucchini has baked for 20 minutes, and the ground beef is cooked through, fill the zucchini boats with the Korean beef mixture.
  • Sprinkle sesame seed on top of each boat and bake for 10 minutes.
  • Remove the zucchini boats from the oven and serve immediately topped with freshly diced green onions and pickled red onions.
