Loaded Potato Skins

Ingredients
 

  • 4 Russet potatoes (Baked and cooled)
  • 1/4 cup Avocado oil
  • 1/2 cup Cheddar cheese, freshly shredded
  • 1/4 pound Bacon (cooked, cooled, and chopped)
  • 1 Green onion, diced

Instructions
 

  • Preheat the oven to 500℉.
  • Cut the potatoes in half and scoop the inside out, leaving 1/4 inch around the outside. (Save the scooped potato for mashed potatoes later in the week!)
  • Place the potato skins on a parchment paper lined sheet pan.
  • Generously brush the avocado oil over the entire potato skins and the inside of the potato.
  • Bake for 15 minutes or until the inside of the potato begins to brown and crisp.
  • Remove the potato skins from the oven and sprinkle cheese, bacon, and green onions inside the potato skins.
  • Return to the oven for 1-2 minutes to melt the cheese.
  • Serve immediately.
