Cut the potatoes in half and scoop the inside out, leaving 1/4 inch around the outside. (Save the scooped potato for mashed potatoes later in the week!)
Place the potato skins on a parchment paper lined sheet pan.
Generously brush the avocado oil over the entire potato skins and the inside of the potato.
Bake for 15 minutes or until the inside of the potato begins to brown and crisp.
Remove the potato skins from the oven and sprinkle cheese, bacon, and green onions inside the potato skins.
Return to the oven for 1-2 minutes to melt the cheese.
Serve immediately.
