6 Hard boiled eggs 1/3 cup Mayonnaise 1/8 tsp Cumin 1 tbsp Cotija cheese 1 tbsp Green onions, finely chopped 1 tbsp Cilantro, finely chopped 1 Jalapeno, thinly sliced (12 slices) Tajin seasoning (garnish) Cotija cheese (Garnish)
Slice the eggs in half and gently remove the yolks.
Place the egg whites on a platter and the yolks into a mixing bowl.
Add mayonnaise and cumin to the mixing bowl.
Beat the yolks, mayo, and cumin on high speed with a egg beater until thoroughly mixed and fluffy.
Stir in the cotija cheese, green onions, and cilantro.
Fill a pastry bag with a star tip with the filling mixture.
Pipe the mixture into the egg whites.
Place one thin slice of jalapeno in the middle of each egg.
Sprinkle tajin seasoning and cotija cheese on top of the eggs.
Serve immediately or refrigerate until ready to serve.
