Ingredients
 

  • 1 3 pound beef roast
  • 2 cups Beef broth or au jus
  • 1/4 cup Butter
  • 2 tbsp Homemade ranch seasoning
  • 5 Pepperoncinis
  • 1 tbsp Butter (for searing in cast iron)

Gravy

  • 2 tbsp flour
  • 2 tbsp butter

Instructions
 

  • Heat 1 tbsp of butter in a large cast iron skillet over medium to medium high heat.
  • Once the pan is hot, sear the beef roast on all sides.
  • Place the beef roast into the crock pot and set to low temp.
  • Add the beef broth, 1/4 cup of butter, homemade ranch seasoning, and pepperoncini to the crock pot.
  • Cover and slow cook for 8-10 hours.
  • When the beef is tender, remove to a plate and cover.
  • In a saucepan, melt 2 tbsp of butter.
  • Add flour and whisk continuously for 1-2 minutes.
  • Gradually whisk in the drippings from the crockpot into the saucepan.
  • Bring to a simmer, stirring constantly, until thickened. (about 3-5 minutes)
