Batter
- 1/2 cup Coconut oil
- 3/4 cup Sugar
- 2 Eggs
- 1 tsp Vanilla extract
- 1 Large Orange, juiced
- Zest of the orange
- 2 cups Flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Sea salt
- 1/2 cup Sour cream
- 2 cups Fresh cranberries (thawed if frozen)
Icing
- 1/2 cup Powdered sugar
- 2 tbsp Heavy cream
Preheat the oven to 350℉.
Melt the coconut oil in a large mixing bowl.
Stir in the sugar, eggs, and vanilla extract.
Add the zest of the orange to the bowl and stir to combine.
Fold in the flour, baking powder, baking soda, and salt.
Gently stir in the sour cream, being careful not to over mix the batter.
Add the cranberries to the batter, stirring just to evenly disperse.
Pour the batter into a greased and parchment paper lined bread pan.
Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Remove from the oven and allow to cool for at least 30 minutes before icing.
In a small mixing bowl, combine the powdered sugar and heavy cream. Stir until smooth.
Drizzle the icing on top of the bread.
