Ingredients
 

Batter

  • 1/2 cup Coconut oil
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla extract
  • 1 Large Orange, juiced
  • Zest of the orange
  • 2 cups Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Sea salt
  • 1/2 cup Sour cream
  • 2 cups Fresh cranberries (thawed if frozen)

Icing

  • 1/2 cup Powdered sugar
  • 2 tbsp Heavy cream

Instructions
 

  • Preheat the oven to 350℉.
  • Melt the coconut oil in a large mixing bowl.
  • Stir in the sugar, eggs, and vanilla extract.
  • Add the zest of the orange to the bowl and stir to combine.
  • Fold in the flour, baking powder, baking soda, and salt.
  • Gently stir in the sour cream, being careful not to over mix the batter.
  • Add the cranberries to the batter, stirring just to evenly disperse.
  • Pour the batter into a greased and parchment paper lined bread pan.
  • Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  • Remove from the oven and allow to cool for at least 30 minutes before icing.
  • In a small mixing bowl, combine the powdered sugar and heavy cream. Stir until smooth.
  • Drizzle the icing on top of the bread.
