Ingredients
 

  • 1 pound Chicken breast
  • 8 oz Pancit canton noodles
  • 2 tbsp Avocado oil
  • 2 cups Cabbage, shredded
  • 1/2 Yellow onion, sliced
  • 1 Carrot, matchstick slices
  • 3 cloves Garlic, minced
  • 2 tsp Sesame oil
  • 2 tbsp Oyster sauce
  • 1/4 cup Soy sauce
  • 1/4 tsp Black pepper
  • 1 cup Pea pods, fresh

Instructions
 

  • Bake the chicken breasts in a 375℉ oven for 20 minutes or until the internal temperature is 165℉.
  • Remove from the oven and allow to cool (covered) for 15 minutes.
  • Boil the noodles for 4 minutes and strain through a colander.
  • Heat avocado oil in a large cast iron skillet over medium heat.
  • Add the shredded cabbage, carrots, garlic and onion. Sauté for 5 minutes, stirring often.
  • Add the sesame oil, oyster sauce, soy sauce, black pepper, noodles, pea pods and diced chicken to the skillet.
  • Stir to combine the ingredients.
  • Serve immediately.
