1 pound Chicken breast 8 oz Pancit canton noodles 2 tbsp Avocado oil 2 cups Cabbage, shredded 1/2 Yellow onion, sliced 1 Carrot, matchstick slices 3 cloves Garlic, minced 2 tsp Sesame oil 2 tbsp Oyster sauce 1/4 cup Soy sauce 1/4 tsp Black pepper 1 cup Pea pods, fresh
Bake the chicken breasts in a 375℉ oven for 20 minutes or until the internal temperature is 165℉.
Remove from the oven and allow to cool (covered) for 15 minutes.
Boil the noodles for 4 minutes and strain through a colander.
Heat avocado oil in a large cast iron skillet over medium heat.
Add the shredded cabbage, carrots, garlic and onion. Sauté for 5 minutes, stirring often.
Add the sesame oil, oyster sauce, soy sauce, black pepper, noodles, pea pods and diced chicken to the skillet.
Stir to combine the ingredients.
Serve immediately.
