- 3 cups Dry pinto beans
- water
- 1 white onion, large
- 2 cloves Garlic, minced
- 1 tbsp Cumin
- 2 tsp Chili powder
- 1 tbsp Sea salt
- 2 tsp Mexican oregano
- 3 tbsp Bacon grease or lard
Rinse the beans and remove any that are overly hard or shriveled.
Pour the dry beans into a stock pot and cover with water. Allow the beans to soak for at least 8 hours at room temperature.
After the beans have rehydrated, simmer over medium heat for one hour.
In a large dutch oven, melt the bacon grease over medium heat.
Sauté the onion and garlic until soft and translucent.
Add the cumin, chili powder, sea salt, and Mexican oregano to the onions and stir to coat with the spices.
Using a slotted spoon, scoop the beans from the stock pot into the dutch oven. Stir the beans often to mix the onions and beans.
Begin adding the bean water to the beans, one cup at a time to thin the beans.
Using an immersion blender, puree the beans to a smooth consistency. Continue adding bean water until the desired thickness is achieved.
Serve immediately.
