Heat the griddle or large skillet over medium heat.
Butter each slice of bread.
Place one slice of bread on the hot skillet, then in this order: add one slice of cheese, the corned beef, the sauerkraut, russian dressing, cheese and the top piece of bread.
Once the bottom of the sandwich is grilled golden and toasty, carefully flip to grill the other side. Each side should take approximately 3-5 minutes.
Remove the sandwiches from the hot skillet and cut diagonally. Serve immediately.
