6 tbsp Butter 2 Russet potatoes 1/2 cup Swiss cheese, freshly shredded 1 tsp Sea salt 1/2 tsp Black pepper
Heat 3 tbsp of butter in a large skillet over low heat.
Peel and shred the potatoes. Place the shredded potatoes in a tea towel and ring out as much water as you can.
Spread half of the shredded dry potatoes onto the skilllet.
Sprinkle the shredded Swiss on top of the shredded potatoes and cover with the remaining potatoes.
Season with salt and pepper.
Allow the potatoes to cook on the low heat for 15-20 minutes or until the bottom is browned and can easily release from the bottom of the pan.
Place a plate over the skillet and carefully flip onto the plate.
Melt 3 tbsp of butter to the skillet and carefully slide the rosti back into the skillet.
Continue cooking for 15-20 minutes or until the bottom is browned and easily released from the pan. Cut in 4ths and serve immediately.
