Ingredients
 

  • 6 6oz Sirloin steaks
  • 3 tsp Sea salt
  • 2 tsp Black pepper
  • 6 tbsp Spicy brown mustard
  • 1/2 Yellow onion, sliced
  • 6 Dill pickle spears
  • Avocado oil

Gravy

  • 2 tbsp Butter
  • 1/4 cup Flour
  • 4 cups Beef broth
  • 1/2 tsp Sea salt
  • 1/2 tsp Black pepper

Instructions
 

  • Pound the sirloin steaks to 1/2 inch thickness with a meat mallet.
  • Season the steaks with salt and pepper.
  • Spread one tbsp of mustard onto each steak.
  • Place 3-4 slices of onion and one pickle spear in the center of the steaks. Roll tightly and secure with toothpicks or cooking twine.
  • Heat 2 tbsp of avocado oil a large cast iron skillet over medium high heat.
  • Sear the steak rolls in the hot skillet on all sides.
  • Remove the steaks to a plate to prepare the gravy in the skillet.
  • Turn the skillet down to medium heat and add 2 tbsp of butter.
  • Whisk in the flour and stir for 3-4 minutes.
  • Slowly add the beef broth, whisking until thickened slightly. Season with salt and pepper.
  • Return the beef rolls back into the skillet, reduce the heat to low, cover, and simmer for 1½ hours. Turn the rolls occasionally while it braises.
  • When ready to serve, remove the rolls to a serving plate and turn the heat up to medium on the remaining liquid. Add a flour slurry (2tbsp of flour mixed with 1 tbsp of water) and whisk continuously to thicken the gravy. Pour the gravy over the rolls and serve immediately.
