Graham Cracker Topping
- 3 tbsp Butter, melted
- 1/4 cup Flour
- 1/4 cup Brown sugar
- 3 Graham crackers, broken into pieces and crumbs
- 1/4 cup Mini marshmallows (broiled at the end of baking)
Preheat the oven to 350℉.
In a large mixing bowl, cream together the sugar and coconut oil.
Add the eggs and vanilla. Stir to combine.
Add the flour, baking powder, baking soda, and sea salt. Gently mix until the wet and dry ingredients are combined.
Fold in the zucchini.
Add the chocolate chips and marshmallows to the batter and stir in.
Grease and line the bread pan with a parchment paper sling.
Pour the batter into the bread pan.
Melt the butter in a small mixing bowl.
Add the flour, brown sugar, and graham cracker pieces to the butter and stir to combine.
Sprinkle the graham cracker topping on the prepared batter.
Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
Once the bread is fully cooked, remove from the oven and turn on the broiler.
Top the bread with marshmallows and return to the oven to broil for 3-5 minutes or until toasty.
Allow the bread to cool in the breadpan for at least 30 minutes before removing.
