Ingredients
 

Graham Cracker Topping

  • 3 tbsp Butter, melted
  • 1/4 cup Flour
  • 1/4 cup Brown sugar
  • 3 Graham crackers, broken into pieces and crumbs
  • 1/4 cup Mini marshmallows (broiled at the end of baking)

Instructions
 

  • Preheat the oven to 350℉.
  • In a large mixing bowl, cream together the sugar and coconut oil.
  • Add the eggs and vanilla. Stir to combine.
  • Add the flour, baking powder, baking soda, and sea salt. Gently mix until the wet and dry ingredients are combined.
  • Fold in the zucchini.
  • Add the chocolate chips and marshmallows to the batter and stir in.
  • Grease and line the bread pan with a parchment paper sling.
  • Pour the batter into the bread pan.
  • Melt the butter in a small mixing bowl.
  • Add the flour, brown sugar, and graham cracker pieces to the butter and stir to combine.
  • Sprinkle the graham cracker topping on the prepared batter.
  • Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  • Once the bread is fully cooked, remove from the oven and turn on the broiler.
  • Top the bread with marshmallows and return to the oven to broil for 3-5 minutes or until toasty.
  • Allow the bread to cool in the breadpan for at least 30 minutes before removing.
