Equipment

Ingredients
 

  • tbsp Instant yeast
  • 1/3 cup Sugar
  • 1/2 cup Water
  • 2 cups Milk
  • 1/4 cup Butter
  • 6 cups Bread flour
  • 2 tsp Sea salt

Topping

  • Coarse sea salt
  • 1/4 cup Butter, melted

Instructions
 

  • In a small bowl, microwave the milk and butter for 1 minute. Allow to cool slightly while preparing the remaining ingredients.
  • Pour the yeast, sugar, and water into a large stand mixer.
  • Add the warm milk and butter.
  • Add the bread flour and sea salt.
  • Using the dough hook, knead the dough for 7-8 minutes.
  • Cover the bowl and allow the dough to rise for 1-2 hours.
  • Prepare the water bath by boiling 3 cups of water. Once the water is boiled, turn off the heat and mix in the baking soda.
  • Punch down the dough and divide into 12 equal pieces. Allow the pieces to rest for 5 minutes.
  • Roll the dough into 30 inch long ropes. Fold into a pretzel shape and allow to rest for 5 minutes.
  • Preheat the oven to 400℉.
  • Place the pretzels into the baking soda water and leave to soak for 2 minutes.
  • Remove the pretzels from the baking soda water to a parchment paper lined sheet pan (6 pretzels per sheet pan) and sprinkle with coarse sea salt.
  • Allow to rest for 10 minutes before baking.
  • Place the sheet pan into the preheated oven and bake for 8-10 minutes.
  • Remove the pretzels from the oven and brush with melted butter. Allow to cool on a cooling rack for at least 15 minutes before serving.
