Ingredients
 

Graham Cracker crust

  • 1/2 cup Butter, melted
  • cups Crushed graham cracker crumbs
  • 1 tbsp Sugar
  • 1/2 tsp Nutmeg

Cheesecake

Strawberry Rhubarb compote

  • 1/2 cup Strawberries, diced
  • 1/2 cup Rhubarb, diced
  • 1/4 cup Sugar
  • 1 tsp Vanilla extract
  • tsp Tapioca starch

Instructions
 

  • Preheat the oven to 325℉.
  • In a small bowl, melt the butter. Add the graham cracker crumbs, sugar, and nutmeg. Stir to combine all ingredients.
  • Press the crumbs onto the bottom of the 9 inch springform pan. Set aside.
  • In a small saucepan, combine diced strawberries, diced rhubarb, sugar, vanilla extract, and tapioca starch.
  • Heat to a boil, stirring occasionally until the sauce has thickened (about 20 minutes). Remove from heat and allow to cool while preparing the cheesecake filling.
  • In a stand mixer, beat the cream cheese, sugar, flour, vanilla, sour cream, and eggs until light and fluffy. Stir in white chocolate chips.
  • Pour the filling into the springform pan.
  • Drop the strawberry rhubarb compote by the spoonful onto the cheesecake.
  • Using a toothpick, swirl the compote lightly into the cheese filling.
  • Place the springform pan onto a sheet pan and bake for one hour.
  • Remove the cheesecake from the oven and allow to cool at room temperature for one hour before refrigerating for 2 additional hours.
  • Once completely cooled, remove from the refrigerator, slice and serve. Add whipped cream if desired.
