Soft, fruity, and incredibly easy to make, these Strawberry White Chocolate Cookies are bursting with real strawberry jam and creamy white chocolate. Finished with a sweet strawberry icing, they’re tender, fresh, and perfect for bake sales, holidays, or everyday treats. In a stand mixer or large bowl, beat the butter and sugar until light and fluffy.
Add the brown sugar and beat until combined.
Add the eggs and vanilla and beat again.
Fold in the flour and baking powder and mix until just combined.
Mix in the white chocolate chips.
Cover and refrigerate the dough for one hour.
Preheat the oven to 375℉.
Remove the cookie dough from the oven and gently mix in the strawberry jam.
Roll the dough into equal sized balls (about 1½-2 tbsp of dough)
Place on a parchment paper lined sheet pan about 2 inches apart.
Bake for 11 minutes.
Once done, remove from the oven and allow to cool on the sheet pan for 5 minutes before transferring to a cooling rack.
Once the cookies are fully cooled, mix the powdered sugar and strawberry syrup until smooth.
Drizzle the strawberry icing over the tops of the cooled cookies.
