- 6 Flour tortillas
- 2 8oz packages Cream Cheese
- 1/3 cup Carrot, shredded
- 2 Green onions, diced
- 1/2 Red bell pepper, diced
- 1/4 cup Cilantro, chopped
- 1 head Romaine lettuce, shredded
- 1 pound Shredded chicken
- 1/2 cup Sweet chili sauce
- 1/2 tsp Soy Sauce
In a medium sized mixing bowl, combine the cream cheese, shredded carrot, green onions, diced red bell pepper, and cilantro. Set aside.
In the second mixing bowl, combine the shredded chicken, sweet chili sauce, and soy sauce.
Place the flour tortillas on a large work surface and spread the cream cheese mixture onto each tortilla.
Sprinkle the shredded romaine lettuce over each tortilla.
Add about 2-3 tablespoons of chicken down the middle of each tortilla, from top to bottom.
Roll the tortillas tightly and wrap with plastic wrap.
Refrigerate for at least 30 minutes to firm up the cream cheese mixture.
When ready to serve, remove the wrapped tortillas from the refrigerator and remove the plastic wrap.
Cut each rolled tortilla into 6 pinwheels (36 total).
Serve immediately
